Holi special – Malpua and Dum Aloo Recipe by Sunita Roy

Malpua recipe Ingredients

  • 250 gram of maida (refined flour)
  • 1 cup of suji (semolina)
  • 1 cup desiccated coconut
  • 1 spoonfuls of elaichi powder
  • 150 gram of sugar
  • 1 cup of chopped dry fruits
  • Approx 2 cups of milk to make batter. pls check the consistency before your add second cup of milk

Process of making Malpua

Step 1: Keep all ingredients ready

Step 2: Mix your ingredients

  • Add refined flour, semolina, desiccated coconut, sugar, elaichi powder into a vessel and mix it well
  • Add chopped dry fruits and mix it well

Step 3: Add milk slowly and mix it continuously

  • Add milk slowly and mix it well till you get paste like consistency

Step 4: Mix it well and keep it aside

  • Set the batter for 1 hour in summer and 2 hours in winter

Step 5: Heat the oil for frying

Step 6: Fry malpua

  • You can use serving spoon to pour a spoonful of batter in hot oil and fry both sides
  • Need to press the malpua gently while frying. please refer the video for this
  • After frying the malpuas golden brown, put them on kitchen towel to let it soak the excess oil from malpua

Dum Aloo recipe Ingredients

  • 6 baking or 12 yellow medium sized (medium) boiled potatoes. medium boiled potatoes should not be too hard or too soft
  • 1 and half medium sized red onion
  • Turmeric powder
  • Chili powder to taste
  • Salt to taste
  • 1 teaspoon garam masala
  • 1 teaspoon ginger garlic paste
  • whole masala (1 teaspoon cumin seeds, 2 cloves, 1 inch cinnamon stick, 3-4 dry red chilies, 1 bay leaf)

Process of making Dum Aloo

Step 1: Keep all ingredients ready

Step 2: chop the onions into long slices

Step 3: Cut the medium boiled potatoes into 1 inch cubes

Step 3: Heat Oil in a frying pan, and add whole masala and fry

Step 5: Add chopped onion and fry till golden brown

Step 6: Add ginger and garlic paste, and fry

Step 7: Add remaining spice powders (turmeric powder, chili powder, cumin powder, coriander powder and garam masala)

Step 8: Add potato cubes and mix it well

Step 9: sprinkle 2 teaspoonfuls of water and mix it well and cook for 5 minutes

Step 10: Garnish with chopped fresh coriander leaves and Serve your Dum Aloo with Malpua on this Holi
